10 Things Loved in July

I’m a little late in posting this one; August is nearly over! Regardless, here are 10 things that made me happy in July.

  1. The Waffle Window: I’ve been hearing about this place for-like-ever, thinking “yeah, yeah, good waffles, I’ll get there.” But, seriously, go soon – it’s delish. Seriously! Waffles so good, you’ll be OMG-ing like teen girl squad.
  2. Free TriMet pass: My work gives out free annual TriMet passes. While I’ve only used it to get to work a few times, it comes in handy on the weekends. I heart TriMet, unless it’s late at night or I’m riding past 82nd.
  3. Cannon Beach: Only in Oregon can you capture scenes like this on a “busy” weekend.
  4. World Cup fever: Great fun, despite my allegiance to Les Bleus, who had more drama than an episode of Glee. In fact, by the time my t-shirt came in the mail, France was OUT! Watching the World Cup Final in Pioneer Courthouse Square downtown Portland made up for my disappointment.
  5. My kitteh: …and his patience over the last month as I have accosted him on a daily basis with my oh so lovely new iPhone. I can haz photo shoot?
  6. del Inti: I love a restaurant that changes the menu on a daily or weekly basis. I also love watching the chef chop leaves from a plant to use as a garnish. They call themselves Peruvian-northwest. I call them yummy. I had the gnocchi.
  7. Mini designer chairs: I got my first blind-box design interior collection miniature chair in Tokyo a couple of years ago. Each collection has nine pieces, so you never know what you’re going to get… an Eames lounger? A Mezzadro stool?
  8. Café Yumm!: My favorite is the smoky yumm bowl. It’s about time Portland got a Café Yumm! I do have a slight beef with their inclusion of an exclamation point in their restaurant name, and their double-m version of yum, but their darn yumm!iness makes it tolerable.
  9. Paper crafts: As I slowly adjust to leaving my work-life as a designer, I’m feeling the need for more creativity in my home-life. I busted out the craft supplies and turned some old paper samples into a fun birthday card for Comma Mister.
  10. Zinnias: These made me smile all month.

Made it: Lemon curd

Lemon curd is one of those things I’ve always loved but for some reason assumed was overly complicated to make. Not so! It’s incredibly easy.

I set out to make this lemon cake recipe from Martha Stewart but was appalled at the number of eggs required for their lemon curd – eight! I really didn’t want to go to the grocery store, so I found this recipe from the joy of baking, which only calls for three eggs, leaving me two eggs for the cake.

I ended up creating my own combination: a lemon curd tart with lemon whipped frosting, topped with candied lemon slices.

Made it: Tomato, corn and avocado salad

Tomato corn avocado saladVeggie overload. I am absolutely in love with in-season cooking during the summer. Why? Because almost everything is in season! This is a super quick recipe from Everyday Food (I have some similar ones from Epicurious). And since I had leftover corn on the cob from the weekend it was even quicker. Steps:

  1. Stand cooked ear of corn in a wide, shallow bowl. Slice and rotate until you have all the kernels off.
  2. Add a pint or two of cherry tomatoes, one avocado – diced, and 1-3 scallions – sliced.
  3. Stir together with the juice from 1/2 a lime, a bit of olive oil and salt and pepper.
  4. EAT

My favorite thing about this recipe is you don’t need any measuring cups or spoons since proportions don’t really matter… just use what you have and it’s delish! I didn’t have scallions this week so I left them out and I doubled the amount of corn to use up what I had in the refrigerator.

Made it: Brazilian black beans, beets and rice

brazilian black beans beets riceI made this dish during World Cup to show my support of team Brazil. If only I had little tiny Brazilian flag toothpicks!

This meal has such a simple combination of flavors. The beets are the star attraction for me, but I also really like the black beans and cheddar. The Brazilian black beans recipe comes from the April 2009 edition of Everyday Food (and it’s been in my menu rotation since then).

A tip to cut down on the prep time (and fart quota*) is to soak the black beans… I usually start them soaking in the morning. Something I read said black beans really only need to soak for 2 to 6 hours because they are small beans. This really cuts down the cooking time!

For this recipe, I simmered the beets and beans together for about 45 minutes until the beets were done, then took the beets out and let the beans cook for about 15 more minutes before moving on to step 3 with the scallions and garlic. This cuts the total time in half so it takes just 1 hour, 15 minutes. The recipe serves six so it’s great if you want leftovers or extra beans for another dish later in the week. Enjoy!

* The first time I searched for instructions on soaking beans, I was amused at the number of websites and cookbooks willing to talk about farts and flatulence!

10 Things Loved in June

2. My new iPhone 4. Words cannot describe how much this has changed my life (I know, gag). By far the biggest game changer of the year.

3. Sugar snap peas. Finally, my garden is growing and these are the most delightful harvest so far. They make it possible to make my favorite stirfry.

4. Half pint creamer by Fred. I love practical items with a touch of whimsy. Fred has the most hilarious gift and novelty items. This hand blown glass classic milk carton makes coffee time extra fun.

5.  My birthday. The big countdown to 30 begins! I LOVE birthdays. (Who doesn’t love a day of me, me, me?)

6. Bento lunch. This bento box lunch was almost too cute to eat.

7. Havaianas. Why do we feel the need to tell people how long we’ve been loving the cool stuff? Let’s get this out of the way: for me, it’s been since 2000 when Brazilian friends let me in on the secret of the best flip flop ever. At that time you had to get them straight from the source (or Miami) or order online. Now they are EVERYWHERE and I welcome new converts to the Havies club. They’re on my Things Loved list because I got two new pairs of thin strap Havaianas for my birthday (love them), and wearing classic stripe was a fun tribute to Brazil during World Cup.

8. Le Hana. Great Japanese food on Portland’s South Waterfront. 50% off entrees makes this place a steal. Yum!

9. Feta cheese. Nothing says summer like feta cheese. Perfect in salads, pasta, pizza, anything. Costco is my secret source.

10. Stream silver placemats and coasters. I absolutely love these new placemats and coasters from Modern Twist. They are made from silicone and are screened with silver lines.
